Product details
The ripening of the grapes is monitored through physicochemical and sensory analyses in order to determine the ideal harvest date. The grapes are received and selected on a sorting table. After this selection, they are sent to stainless steel fermentation tanks. Fermentation takes place under controlled temperature (28 to 30°C) for about 10 days. Once finished, through gentle pressing, the free-run wine is separated from the press wine, which is then transferred to used French oak barrels. Aging lasts for about 18 months.

Tasting Notes:
Intense and opaque ruby color, with a reddish-blue hue. Aroma of ripe wild berries in a complex ensemble with notes of forest floor. Balsamic hints of cigar box. Structured palate, with ripe and well-present tannins. Integrated and firm acidity. Very long, aromatic and gastronomic finish.
Store and Serve Advices:
It should be served between 15 and 17°C.
Food Pairing:
Intense and firm, it pairs particularly well with strongly flavored cuisine, such as oven-roasted kid goat or aged meats.
