Product details

Winemaking:
The grapes were harvested manually and cooled before gentle pressing. After cold settling, fermentation took place at 15°C in stainless steel tanks. Some special batches fermented in used 500L French oak barrels with indigenous yeasts. Contact with fine lees and bâtonnage added texture. Aging on fine lees in stainless steel and used barrels further enhanced complexity and freshness.
