Winemaking:
Grapes were crushed with partial destemming, followed by gravity-assisted decantation of the must. Fermentation took place in stainless steel tanks at a controlled temperature of 16-18°C. We left the fine lees in the tank and then lifted them using nitrogen injected into the bottom of the tank to make the wine resistant to oxidation and add complexity.

Tasting Notes:
A pale straw-coloured wine with a clear appearance; the aroma features notes of citrus oils and orange blossom. A buttery mid-palate is imparted by the stainless steel bâtonnage. The 18 months of bottle aging prior to release allowed it to acquire fantastic complexity. On the palate, it displays impressive freshness, which, combined with a beautiful structure, bodes well for good aging potential, in line with classic Dão whites.
Store and Serve Advices:
Serve at 12ºC.

Excellent with fatty fish and white meat dishes.
