Hand-picked grapes are selected on a sorting mat at the winery entrance. Destemming and crushing follow, and the grapes are transferred to temperature-controlled stainless steel tanks for alcoholic and malolactic fermentation. Maceration takes place for approximately 20 days, using the delestage technique. The wine is then aged for 36 months in 225-liter French oak barrels (new and used). The final blend ages for an additional 8 years in the bottle before being released.

Tasting Notes:
Deep ruby with a completely opaque center. Very intense aroma of black fruits like blackberries and cassis, cedar, leather, smoke, and toasted wood. Very full-bodied, with dusty tannins reminiscent of chalk. Vibrant acidity that persists throughout the tasting. Very long finish.
Store and Serve Advices:
Between 15 and 18º C. Decant 15 minutes before serving.
Food Pairing:
Given its characteristics, it is ideal for special meals, where grilled black pork, Mirandesa steak and Portuguese stew can shine.
