The grapes, sourced from old vineyards, were transported to traditional stone presses, where fermentation took place with foot treading by men at regular intervals. This ancient method ensures a balanced extraction of color, tannins, and aromatic compounds, promoting a homogeneous and gentle maceration. Fermentation was stopped by the addition of high-quality grape brandy.

It presents an intense amber hue with subtle greenish reflections, visual characteristics that reveal a long oxidative evolution and careful aging in wood. On the nose, it reveals great complexity and aromatic depth, with highlights of dried fruits (figs, dates, walnuts), toasted almonds, candied orange peel, honey, sweet spices, and a light touch of iodization. All the aromatic elements are harmoniously integrated, reflecting the maturity and balance of the blend. On the palate, it displays great concentration and a velvety texture, with an excellent balance between structure, freshness, and elegance. The sweetness is balanced by vibrant acidity, which lends dynamism to the tasting, while the excellent quality and elegantly integrated tannins offer solid structural support and contribute to its persistence and complexity. The finish is long, precise, and persistent, reflecting the sophistication and unique profile of a very aged Tawny.
