Winemaking:
Carefully made from selected grapes from a vineyard over 130 years old, it undergoes a meticulous process of total destemming and prolonged maceration, ensuring optimum extraction of aromas and flavours. Fermentation takes place in stainless steel tanks, using indigenous yeasts and under controlled temperatures, followed by careful decanting into 225 litre French oak barrels, where the wine ages for 12 months, gaining complexity and elegance.
