100% Mechanical harvest. 20 months of aging in the bottle, after 2nd fermentation. Sparkling base wine after 1 year of aging in stainless steel vats. The grapes go directly to the press with destemming without crushing. 24 hours of cold decantation; 100% fermentation in stainless steel vats at controlled temperature. 100% Malolactic fermentation.

Notes of apple, cereals, and some brioche. Fresh and elegant acidity, creamy with a persistent finish.
