Manual night harvest with selection on a sorting table. Total destemming followed by passing through a mass exchanger. Fermentation in small stainless steel vats, with temperature control to preserve all the aromatic elegance. Aged for 12 months in oak barrels (80% French and 20% American), followed by the same period in the bottle.

Tasting Notes:
Clear, garnet colored. Seductive aromatic profile with aromas of cocoa, menthol, dried fig and tobacco. With present but soft tannins, it finishes long and elegant.
Store and Serve Advices:
Serve at a temperature between 16 and 18ºC. Bottles should be stored horizontally in a clean, airy place protected from light and with normal conditions of mild temperature and constant humidity.
Food Pairing:
Perfect for typical Alentejo lamb, other oven-roasted dishes or seasoned grilled meats.
