Manual harvest with selection on a sorting table. Total destemming followed by cold shock in a mass exchanger. Fermentation takes place in small stainless steel vats at controlled temperature followed by ageing in French oak barrels for 12 months.

Tasting Notes:
Dark color, typical of the variety. Lots of woods, pine needles, cocoa and smoky notes on the nose. Full, meaty, intense flavor, balanced by a surprising acidity. Excellent for the table.
Store and Serve Advices:
Serve at a temperature between 16 and 18ºC. Bottles should be stored horizontally in a clean, airy place protected from light and with normal conditions of mild temperature and constant humidity.
Food Pairing:
Ideal for oven-roasted dishes (lamb and goat) and game dishes.
Allergens:
Contains sulphites.
