After careful and meticulous harvesting of the best bunches, the grapes were sent to a refrigerated container, where they spent 12 hours at 6ºC. The following day, they were transported to the winery in a refrigerated environment, where they were completely destemmed and crushed at the entrance to the fermentation tank. Fermentation took place in large tanks, with an optimal contact surface ratio and at a controlled temperature of 24ºC, with total fermentation for 20 days. After alcoholic and malolactic fermentation, two thirds were aged in stainless steel on fine lees and one third in new French oak barrels for one year. After bottling, the grapes were aged for nine months in bottles until they were released onto the market.

Tasting Notes:
Deep ruby-purple color. Intense, primary aroma full of personality. Its spicy side is immediately apparent, with floral notes of pink pepper in good harmony with wild berries, with emphasis on blueberries and red cranberries. In the background, liquorice and restrained toast. In the mouth, the first impact is an explosion of intensity. Nervous, with opulent tannins and great angularity, it leads the tasting to a long and very persistent finish, with finesse, where freshness and acidity raise the bar for longevity.
Store and Serve Advices:
Serve at a temperature between 14ºC and 16ºC.
Food Pairing:
Its strength and freshness suggest red meats and stewed game, for an experience that highlights and enhances all the sensations on the palate. Due to its intensity and tension, traditional soft cheeses and sweets that contain cheese and red fruits are also great options for successful pairings.
