The grapes are harvested manually in small 20 kg boxes and transported to the Quinta do Sol Reserve Cellar. There, a first selection of bunches is made, followed by a gentle de-stemming and a second selection berry by berry. The whole berries are then transported to stainless steel fermentation vats using a system without pumping. An important part of the grapes destined for the production of Quinta do Vesuvio is fermented in new 400-liter French oak barrels, with maceration by submerging a blanket, through treading with “monkeys”, or, in a more advanced phase of alcoholic fermentation, by hand, allowing dense, rich and concentrated wines to be obtained, which contribute significantly to the final blend. Once the alcoholic fermentation was finished, post-fermentation maceration followed, during which the extraction of tannins from the seeds was promoted, which complement the tannins extracted from the skins and which allow the development of a more voluminous and complete “mouth” and increase the longevity of the wine. Aging was carried out in 400 L and 225 L French oak barrels (80% new and 20% used) for 14 months.

Tasting Notes:
Seductive floral and fresh aromas of rose hips and secondary notes of clove and some wood smoke, very discreet and well integrated, not overlapping, but rather in harmony with the entire set. It fully fills the palate with rich fruit (blackberry, blueberry and black plum), well defined and highlighted by acidity that gives good size and balance to the wine. The tannins, very present but very fine, provide the imposing structure that Quinta do Vesúvio wines have become accustomed to.
Store and Serve Advices:
Store lying down at a temperature of 15°C. Serve at a temperature of 16°C to 18ºC.
Food Pairing:
This wine pairs perfectly with red meats, roast beef and grilled meats.

We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
