The grapes are selected de-stemmed and crushed. After cold static decantation, the must is racked and inoculated with selected yeasts. At the end of this 1st fermentation, a wine is obtained, based on sparkling wine, relatively neutral in aromas and with prominent acidity. In the 2nd phase, the “Traditional” method is followed, which consists of a second fermentation of the base wine inside the bottle, for approximately 2 months. The sparkling wine then goes through an autolysis and aging process that lasts around 24 months underground, finishing with the removal of impurities.

Tasting Notes:
Straw in color and restless bubble, it seduces with a deep, creamy and complex nose. It suggests notes of biscuit and candied orange, wrapped in touches of burnt sugar and toasted bread. In the mouth we have volume and irreverence, a pleasant sensation of fine mousse that ends vibrant, firm and dry. Citrus and mineral tones shine based on satin hints of brioche. A good example of a balanced and intriguing combination in a sparkling wine from Alentejo.
Store and Serve Advices:
Better serve at a temperature between 6ºC and 8ºC.
Food Pairing:
It goes well with Iberian ham tapas, oven-roasted lamb, migas with spare ribs, Bairradin suckling pig or sericaia with plum confit.
