The different varieties were harvested according to the evolution of their state of maturation. Trincadeira and Aragonêz are earlier varieties, and Touriga Nacional and Alicante Bouschet are later varieties. For this reason, each fermentation process was individualized, but the processing was similar. The grapes were de-stemmed, crushed and fermented in stainless steel vats at a controlled temperature of 26-28ºC. A careful extraction was carried out, common to all fermentations, through a gentle process with light pumping over. After fermentation, the new wines remained separated by grape varieties in stainless steel. Aging in stainless steel vats until bottling.

Tasting Notes:
Visually, it has an intense, violet and bright garnet ruby colour. The aroma has rich and concentrated notes of ripe fruit, plum (Aragonez), florals (Touriga-Nacional), ripe black fruit (Alicante-Bouschet) and a touch of cherry and slight herbal (Trincadeira). Clean and exuberant aroma. In the mouth, it has an excellent balance, presenting a lively acidity and a good volume in the mouth. It is rich and textured, finishing long and pleasant.
Store and Serve Advices:
Service Temperature 16ºC-18ºC.
Food Pairing:
Given its intensity, youthfulness and acid balance, it is very versatile at the table. Accompanies charcuterie dishes, semi-cured sheep's cheeses and grilled or oven-baked meats. Pastas and pizzas also suit this profile well.
