Spontaneous fermentation for about five to seven days followed by a maceration period during which malolactic fermentation takes place. The batch aged for 21 months in French oak barrels.

Tasting Notes:
Dense garnet colour. Aromas of wet earth and black fruit well integrated into the wood. Austere, but with a very fresh set.
Store and Serve Advices:
The ideal serving temperature is between 16ºC and 18ºC.
Food Pairing:
Ideal with chicken stew, Bolognese pasta, roasted turkey, lamb chops and the traditional Alentejo pork.
