Harvested by hand at their optimum point, the grapes are destemmed, crushed and vinified according to a process based on careful maceration with extraction of colour, tannins and aromas from the films, complemented by permanent reassembly during fermentation. This takes place in stainless steel vats, at a controlled temperature between 28-30ºC, until reaching the desired Baume degree. In this phase, the wine brandy (benefit) is added, giving rise to a fortified wine. Excellent quality wine obtained by blending wines of varying degree of maturity and provenance. The Cálem Special Reserve Tawny is the result of the careful combination of wines aged for at least 7 years in oak casks.

Tasting Notes:
Auburn-brown in colour, it has very smooth and balanced aromas of dried fruits, spices and some wood. Full-bodied and velvety, with great structure and long finish.
Store and Serve Advices:
Store horizontally at a ± 15º C, constant temperature. Best served at 15 - 18ºC.
Food Pairing:
Perfect when refreshed, it is a wonderful aperitif. The aromatic richness and the elegance of the flavours make it the ideal combination to accompany a variety of desserts, including pear and raspberry puff pastry, pumpkin pudding with spices and coconut chiffon with Dulce de leche.
