Total destemming, natural static defecation. 100% fermented in 2nd use barrels. Maturation for 36 months in French oak barrels of 2nd use.

Tasting Notes:
Intense citrus colour. Predominant aroma in notes of complexity; dried fruits, toasted cereal, notes of bread making and nuances of fennel. Complex, fresh, unctuous flavour with long persistence.

Should be served at 11ºC.
Food Pairing:
Perfect to pair with fish and meat on the grill, roasted or stewed as long as lightly seasoned and well structured.

The wines from our rarity zone are stored and air-conditioned in the most correct way so that the wine ages correctly in the bottle, but over time, the wine evolves and changes its characteristics.
We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
