On arrival at the Quinta dos Carvalhais winery the grapes were separated by variety, underwent de-stemming and were softly crushed. The free-run juice is collected by gravity into stainless steel fermentation tanks with automatic temperature control. Here it fermented for about 6 days, with pumping-over to ensure the soft extraction of aroma components from the skins. Following fermentation, part of the chosen blend was matured in used oak wood barrels for a period of 12 months, where it remained for 12 months. After the final blend was prepared, the wine underwent the necessary treatments and was then bottled.

Tasting Notes:
It has ruby hue, with a bouquet of violet and black fruits, as well as notes of spices and oak from the portion of the blend that matured in oak barrels. Its palate is a fine balance of all the components and the elegance of the soft tannins which deliver a very lively, stimulating and very enjoyable wine.
Store and Serve Advices:
As with all fine Dão wines, this wine has a very long shelf-life, and can remain in excellent condition for up to 10 years. The bottle should be kept horizontally, in a dry an cool place. Serve between 15ºC- 17ºC.
Food Pairing:
Excellent partner for a variety of meat, game and poultry dishes as well as with cheese.
