Pre-fermentation cold maceration (10 to 12 ° C) for 3 days with yeast indigenous, under controlled temperature. Subsequently, fermentation for about 3 weeks, at controlled temperature below 25 ° C and homogenization by treading. After the fermentation finished, the mill from the old vines was decanted into French oak barrels before starting the malolactic fermentation.

Tasting Notes:
Loaded and clean colour. Aroma of coffee and floral, but the ripe fruit is noted for its intensity. Soft in the entry, and this combined with good acidity, rich in fruity tannins. Wine with structure but rather fresh and balanced. Smooth and harmonious finish.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serve at a temperature of 16°C to 18ºC.
Food Pairing:
Excellent served with strong dark meat and game dishes.
