Harvesting is done manually into 20 kg boxes. Partial destemming without crushing, followed by foot treading in a traditional lagar (wine press). Fermentation begins in the same lagar at an approximate temperature of 26°C for 8 days. At the end of fermentation, it undergoes prolonged aging in used 225-liter French oak barrels. This wine is obtained through the selection of different barrels containing wines from the 2014, 2016, and 2018 vintages. Each vintage aged for approximately 24 months in barrels and was subsequently stored in stainless steel tanks with removable lids. Finally, it was lightly filtered and bottled.

Tasting Notes:
A very complex aroma, with balsamic and spice notes, as well as truffle and light black fruit combined with a medicinal finish. It presents a complex volume on the palate, elegant and with vibrant acidity, with fine and silky tannins, finishing long and persistent.
Store and Serve Advices:
It should be served between 16ºC-18ºC. It will evolve calmly and progressively over the next 15 to 20 years.
Food Pairing:
This wine is ideal to accompany red meat dishes as well as game and aged cheeses.
