Sparkling wines differ from still wines as they undergo a second fermentation which produces carbon dioxide, giving the much-desired effervescence. This second fermentation can take place in pressurised stainless steel tanks (charmat method) or in the bottle itself (champenoise or traditional/classic method).

joint experience with a Champagne producer, Emmanuel Lassaigne. Concentrated and elegant aroma with apple, quince and tangerine, notes of cardamom, marzipan and brioche. Fine bubble with little pressure and lots of creaminess, good mouth volume and a lot of overall charm.
Store and Serve Advices:
Store at 6-8ºC. Serve at 10ºC to be consumed at 12ºC.
