Manual night harvest, sorting table, direct press without crushing and cold decantation for around 12 hours, without additives. Spontaneous fermentation in vat without any temperature control. Spontaneous alcoholic and malolactic fermentation. The wine of the year will be blended with the "reserve wine", a 5-year-old solera. Second fermentation in bottle with free yeast. Aging for 36 months on lees (sur lies).

Tasting Notes:
Clear straw yellow color, intense nose and notes of citrus, toasted bread. Medium-bodied attack, with beautiful acidity, aromas are repeated in the retronasal. Very long finish. Fine bubble, good texture and persistence.
Store and Serve Advices:
Store at 5ºC and serve at 7ºC to be drunk at 9ºC.
Food Pairing:
Pairs well with seafood, but with enough complexity for more elaborate fatty fish dishes.
