Product details
Pre-fermentation maceration for 72 hours, followed by pressing and static decantation at 10°C. After a clean draw, fermentation took place in stainless steel tanks at a controlled temperature of 16°C. After alcoholic fermentation, the wine was aged in stainless steel on fine lees for 9 months, and a third of the ageing was done in used French oak barrels for the three months prior to bottling.

Tasting Notes:
Medium-deep yellow colour, suggesting skin contact. Complex and captivating nose. Yellow-fleshed fruit in the background, with slight reductive and evolving nuances of fine lees, kerosene, honeycomb, and rice powder. The attack is intense on the palate, with enormous amplitude and angularity. Tense and lively, its acidity provides the balance and crispness that lend it an incredibly persistent freshness.
Store and Serve Advices:
Serve at 10/12ºC. Store the bottle horizontally.
Food Pairing:
This Arinto calls for gastronomic dishes with some complexity. Its sharp freshness balances perfectly with oily or oven-baked fish, such as sea bass or confit cod. Intensely flavoured shellfish, such as clams or scallops, also stand out. Roasted white meats and more mature soft cheeses are excellent companions, enhancing this wine's tension and depth.
