After hand-harvesting the overripe grapes, they are partially destemmed and crushed in the wine press, where they undergo light maceration before alcoholic fermentation (AF). This occurs slowly and at a controlled temperature. Brandy is added to the fermentation when the desired sugar content (Bé) is reached, resulting in a fortified wine. Finally, the resulting wine ages in oak vats for two years. It is stabilized and filtered before bottling in Gaia.

Tasting Notes:
Bright, medium-full ruby appearance. With aromas of ripe wild berries and, on the palate, notes of black cherry, liquorice, and dark chocolate.
Store and Serve Advices:
It is recommended to store in a cool place, at a constant temperature (ideal storage temperature 12ºC), away from light, and in a horizontal position.
Food Pairing:
Ready to enjoy as soon as the bottle is opened. Perfect with chocolate mousse, aged cheeses, or, for moments of true indulgence, cherry pie.
