The Alvarinho grapes are carefully selected and transported in 20 kg boxes, where they are pressed whole to extract a high-quality must. The must is clarified at 12ºC for 48 hours and fermented at a controlled temperature for 12-15 days. After the initial fermentation, the wine spends 5 months on fine lees. The sparkling wine is then bottled and undergoes a second fermentation in the bottle, followed by a 24-month aging process. The process is concluded with remouage and disgorgement.

Tasting Notes:
This sparkling wine has fine and persistent bubbles, mineral aromas and hints of toast and biscuit, the result of its prolonged aging in the bottle. It is full-bodied and dry (natural brut), with good acidity and a fruity finish where the characteristics of the grape variety are dominant.
Store and Serve Advices:
Serve at 6/8ºC.
Food Pairing:
Perfect as an aperitif or with roasted and grilled meats, especially poultry, goat, lamb and suckling pig.
