Product details
The grapes are harvested by hand and transported to the winery in small boxes. This is followed by complete destemming, crushing, pressing and decanting in cold stainless steel tanks. The completely clean must is then transferred to other stainless steel tanks where it will ferment at a controlled temperature of around 15°C until all the sugars are gone. Once the alcoholic fermentation is complete, the wine is sulphited. A few days later, it is transferred to another stainless steel tank. 25% of the batch ferments in used French oak barrels and the rest in stainless steel. When preparing for bottling, it only undergoes a light fining with mineral agents and then filtration immediately before filling the bottles in order to preserve all the aromatic potential. Natural stabilisation.
