The harvest took place under ideal atmospheric conditions in the first week of September. The grapes were duly selected, subjected to total destemming and partial crushing. They were then foot-trodden in a granite press for the first two days. Alcoholic fermentation took place over 10 days in a controlled environment in stainless steel tanks, as did the subsequent malolactic fermentation. The aging took place over 20 months in new 500-litre French oak barrels.

Tasting Notes:
Intense purple-red colour. Notes of ripe black fruit, forest and spices. Goes well with roasts of large game (wild boar and deer), hare stew and other intense feathered game dishes.
Store and Serve Advices:
Serve at a temperature of 17ºC.
Food Pairing:
It is a gastronomically versatile wine, pairing well with a board of sausages, with cheeses of different cured meats and textures, and also goes well with salads, pasta, pizzas, and grilled, oven-baked or stewed meats.
