The white grapes are crushed by foot before fermentation, together with 10% of the total brandy that is added to the final Port. This allows us to macerate the grapes at lower temperatures and for a longer period before fermentation. When the must was ready for the addition of the remaining brandy, the fortification was carried out in one go, adding all the brandy to the must and skins in the lagar. A few more presses ensured that the wine was well homogenized and the fermentation was stopped. The must and brandy mixture remained in the lagar for another two days, with light pressing twice a day (10 minutes each time). It was then racked to the storage tank together with all the pressed wine (we use traditional basket presses). The wines are aged (over 100 years) in wooden Port casks and in small stainless steel vats for a minimum of six years, at which point we make the final blend before bottling.

Tasting Notes:
Strong nutty flavor, with dried apricot, prunes and raisins. Aging in old oak casks for a minimum of seven years makes it more complex and spicy.
Store and Serve Advices:
It is recommended to serve at a temperature of 8 to 12ºC.
Food Pairing:
White Port is a very refreshing aperitif – serve chilled, ideally mixed with tonic or soda, a few ice cubes and a slice of lemon.
