The grapes were destemmed and pressed using a 19th century rod press. Static decantation. Fermentation with indigenous yeasts only, in used French oak barrels, without temperature control. After fermentation, the wine was aged on fine lees in the same barrels for approximately 6 months, with batonnage. Gentle filtration and bottling on April 14, 2023, taking into account the biodynamic calendar. The result is a wine with minimal intervention.

Tasting Notes:
Citrine colour with slight straw reflections. Pure aroma, with good intensity and complexity. The aromas of ripe citrus fruits (lemon and grapefruit), white flowers and aromatic herbs (lemon thyme) stand out. The ageing in barrels gives it slight spicy aromas. Dry palate, with an elegant attack and very good mouth aroma. Fine and balanced acidity that acts as the backbone of the wine, giving it a long (salivating) finish. A tense and very gastronomic wine.
Store and Serve Advices:
It should be enjoyed between 12 and 14°C, preferably in a Chardonnay-type glass, after decanting.
Food Pairing:
Ideal with seafood, grilled fresh fish, white meats and as an aperitif.
