Hand-harvesting, total destemming, gentle pressing of the whole berries in a pneumatic press. Static cold clarification of the must at 12ºC for 48 hours. Fermentation for 3 weeks at temperatures between 14ºC and 22ºC. Ageing on fine lees for 6 months.

Tasting Notes:
Austere profile, slightly floral and fruity, a complex aroma with a strong mineral component. On the palate it has good structure, vibrant acidity and a long finish.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-12°C.
Food Pairing:
Good with seafood, grilled fresh fish, white meats and as an aperitif.
