Product details
Winemaking:
Grapes produced in vineyards certified under the integrated production system and approved for DOC Alentejo sub-region Borba wine, were harvested manually in the morning, allowing the fruit to reach a good temperature on arrival at the winery, facilitating quality control of the must and later the wine. At the winery, after destemming and crushing the grapes, the must is drained and pressed, safeguarding the quality and varietal characteristics of the must. The ‘lágrima’ must (must that runs off without pressing) clarifies for 18 to 24 hours and ferments at a constant temperature of 18ºC for 14 days. After a period during which the wine stabilises by physical processes, it is bottled after the winter.
