Product details

Winemaking:
Fermentation takes place in stainless steel vats, with skin maceration and pumping over at temperatures between 18-22ºC, aimed at producing whites full of structure, with enough phenolic compounds to withstand prolonged ageing in wood. Fermentation is interrupted by the addition of grape spirit (benefício), giving rise to a fortified wine. A wine of very good quality, obtained by blending wines of varying degrees of ripeness and provenance, aged for at least 7 years in small oak vats.

Store and Serve Advices:
The wine should be stored in a cool, dry place, away from light and temperature fluctuations, and the bottle should remain upright. As a natural product, Port is subject to age-related deposits. Once the bottle has been opened, it is recommended that Port Wine is consumed between 30 and 60 days. The times suggested here are merely guidelines and do not imply that the wine is dehydrated, but only a slow evolution that may lead to the loss of its original sensory characteristics. Serve at a temperature of between 8 and 10ºC.

Food Pairing:
Absolutely divine as a starter, it is the perfect choice to accompany cream-based soups and light dishes such as prawn tempura with passion fruit. Its aromatic complexity overwhelms the senses and pairs very well with desserts that aren't too sweet, such as an almond tart or a refreshing pineapple mousse. The multiplicity of possible harmonies is surprising, and it's up to the consumer to discover new flavours.
