In this wine, made from two worlds of oenology, we blended more than varieties, the story of this wine begins in the vineyard: Antão Vaz, from a younger vineyard (around 40% of the blend) was treated in light of the most recent and common techniques – whole bunch pressed, a few hours after harvest, fermented in stainless steel tanks at a controlled temperature of 14 – 16 ºC. Kept in stainless steel, after fermentation, in contact with the fine lees, without bâtonnage, for 3 months; The grapes from the old vineyard, where Diagalves predominates, but where there is a mixture of plantations with Manteúdo, Roupeiro, Perrum and Antão Vaz, were treated in light of the oldest knowledge. Completely treated like carved wine. Fermented in an uncoated clay pot. The grapes were de-stemmed, leaving the must in full contact with the skins, with native yeasts and without temperature control, in a slow and calm fermentation. The wine was separated from the masses at the beginning of February, after 5 months of skin contact. Both entities of this batch, the Antão Vaz of the stainless steel deposits and the mixture of native grape varieties made in the clay pots, were united in February. The batch remained harmonizing details in stainless steel for 5 months, and was then bottled with very light filtration.

Tasting Notes:
Visually it appears straw yellow or light gold. The aroma initially reveals restraint and complexity. Shows ripe fruit, Orange jam, Marmalade, Pear. The time in the glass brings earthy and spicy notes (Cardamom, Clove). The mouthfeel is rich, textured and unctuous. Vibrant acidity bring balance and fantastic life. It has a sublime balance between the tension of acidity and ripe fruit. It ends long and with great complexity.
Store and Serve Advices:
It should be served at a temperature of 10-12º.
Food Pairing:
A wine of contemplation, it can first of all be taken in good company and as a partnership have a cured sheep's cheese, like Nisa's for example, broken into small pieces, in the Amareleja style. It could be a good partner for oven-baked fish, stewed or grilled meats. It has structure, unctuousness and acidity to accompany dishes with strong flavours and rich textures. Looking at our origins, it will be a great wine to accompany a cod broth or any other recipe prepared with the “faithful friend”.
