Product details
This wine of superior quality and complexity is the result of the concentration caused by the development of Noble Rot in the berries of the grapes during the months of October and November. The grapes come from a wine of about 15 years in the plateau of Alijó, next to the village, in schist soils, with the main exposure to spring, armed in terraces of two bards and pruned in bilateral cord. The grapes were harvested by hand with selection of noble rot in mid-November. The direct pressing was done in manual vertical press. Partial fermentation took place at controlled temperature after symbolic decanting. Part of the batch was fermented in 300 liter used barrels.
