3 vinifications were carried out: in the 1st tank, we filled it with 1/3 of crushed grapes, 1/3 of whole bunch grapes and 1/3 of crushed grapes. In the 2nd tank we fermented at 27ºC with crushed grapes and daily gentle pumping over. In the 3rd tank we put crushed grapes. We started by carrying out a pre-fermentative maceration at 10ºC for 5 days, followed by fermentation at 27-30ºC and at the end a post-fermentative maceration at 30ºC for 10 days. From the 1st and 2nd vat we had wine undergoing malolactic in vat (20%) and in stainless steel (80%). From the 3rd tank, all the wine underwent malolactic fermentation in barrels. The barrels used are 225L and 500L, used, made of French oak. The wine was aged in barrels and vats for 3 years and 2 years in the bottle.

Tasting Notes:
The terroir of Quinta dos Carvalhais is imprinted in the aromas, texture and elegance of this Alfrocheiro. It has floral notes, of black and wild fruit, cedar and beeswax, resinous nuances, of forest, moss, pine, "sous-bois" and a touch of menthol. The mouth has a firm and defined attack, with great freshness and polished tannin, in an elegant and enveloping body. The wine ends in a voluminous, delicate, long, persistent and difficult to forget finish.
Store and Serve Advices:
Bottle horizontally. Ideally, from the 4-5th year after harvest date (on the label). Storage potential: 20+ years. Serve directly from the original bottle. Recommended temperature: 14ºC to 16ºC. Consume within 24 hours of opening.
Food Pairing:
It is a wine that invites you to the table, it is very gastronomic. I recommend it to be drunk alongside a lagareiro octopus, as well as oven-baked meat.
