Winemaking:
From the best plots of Quinta da Carregosa, the grapes were harvested manually in the plots that showed a more balanced maturation. The grapes are subjected to crushing and total stemming. This is followed by a period of 24 hours of pre-fermentation Maceration at 30ºC to maximize the action of the grape enzymes responsible for extracting colour and aromas. Selected yeasts are used to induce alcoholic fermentation, which takes place between 22ºC and 24ºC for a minimum of 10 days. Malolactic fermentation induced with temperature control.
