Winemaking:
The different grape varieties are destemmed and lightly crushed before being pressed. The wines are mostly fermented in stainless steel vats, 35% are fermented in 225-liter French oak barrels, 20% of which are new. The aim is to maintain the aromatic finesse of the grape varieties and use the wines fermented in barrels for structure. No malolactic fermentation. Aging 65% stainless steel vats, 20% new barrels, 15% second year barrels. The barrel-fermented wines are racked three times a week during the first month after completion of alcoholic fermentation. After that, only once a week for another three months. The total time in barrel is therefore five months.

Tasting Notes:
This Cedro Reserve is made from the distinctive Viosinho and Gouveio grape varieties, which give the wine character and complexity. The aroma is intense and captivating, with fresh notes of citrus, peach and floral nuances that add elegance to the whole. On the palate, it reveals a silky texture and fine acidity, highlighting vibrant Flavors of lemon, ripe peach, dittany grass and a distinctive minerality. The subtle integration of the oak provides a refined structure, while the long aftertaste enhances the taste of the wine. This Cedro do Noval Reserve White is fresh, vibrant and full of character, reflecting the region's unique schist terroir.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-12°C.
Food Pairing:
Ideal accompanying all fish dishes, seafood and some lighter meat dishes.
