Product details
Harvest at the end of September. Grapes immediately destemmed and pressed. Slight skin maceration inside the press for 6 hours. The resulting must was cooled (6ºC) and statically decanted overnight. Fermentation in stainless steel for 16 days at a temperature of 15-16ºC. It remained in vats with bâtonnage (12 months).
Grape Varieties:
Malvasia de Colares
Tasting Notes:
Medium-intensity yellow colour. Citrus and cooked apple notes. Herbal sensation (aniseed and honey). Medium-bodied, bittersweet, very fresh and pleasant. With ageing, the wine loses a little of its initial fresh style, retaining the elements that make it unique. The aromas become more distinct with the appearance of toasted notes of dried fruit, iodine, wax and hay.
Store and Serve Advices:
Serve chilled (10ºC-12ºC). Potential to keep for 15 years.
Food Pairing:
Very versatile, even as an aperitif. It marries very well with the exotic flavours of Thai and Indian cuisine, seafood, grilled fish and sophisticated salads. As it ages, it takes on a new patina, pairing well with more sophisticated and spicy fish dishes. Delicious with oysters!
Allergens:
Contains sulphites.
