Product details
After being harvested by hand, the grapes are transported in 18kg crates so as not to damage the integrity of the bunch. Once at the winery, the crates are unloaded onto a sorting conveyor for the first sorting of the grapes. This is followed by destemming, berry picking and crushing, which is then transported by gravity to the pneumatic press. After clarifying the must, alcoholic fermentation began in a stainless steel tank, followed by fermentation in oak barrels at low temperatures of around 16ºC, in order to preserve all the character of the plot. The alcoholic fermentation took approximately 20 days, after which the different components aged for 9 months with periodic batonnage.
