Product details

Winemaking:
The grapes are harvested by hand into small boxes in order to preserve the quality of the fruit. The grapes were gently pressed. After clarification by static decanting, alcoholic fermentation took place at around 15ºC, resulting in the sparkling base wine. 15% of the blend fermented in 3 and 4 year old French oak barrels where it remained on its lees for 8 months. After tartaric stabilisation of the base wine, the second fermentation was carried out in the bottle (traditional Champagne method). The second fermentation was aged on its lees for 72 months.
