Winemaking:
After a surgical manual harvest, the grapes are transported to the winery in 20 kg boxes. After undergoing careful manual selection, the bunches are sent to a small French oak vat where only 30% of the bunches are destemmed and crushed. Alcoholic fermentation follows at 24-26ºC, with a light “treading” and pumping over in a bucket in order to achieve a good but careful extraction. After alcoholic fermentation, the wine completes malolactic fermentation and ages in used French oak barrels and casks.

Tasting Notes:
Garnet color and not very concentrated. On the nose, it is very fresh and expressive, with nuances of red fruits and citrus, which combine harmoniously with vegetal notes and aromatic herbs. In the tasting, it is broad and very seductive, with very fresh and original flavors, suggesting nuances of forest and wild fruits, finishing very intense and persistent.
Store and Serve Advices:
Serve at a temperature between 16 and 18ºC. Bottles should be stored horizontally in a clean, airy place protected from light and with normal conditions of mild temperature and constant humidity.
Food Pairing:
Goes well with duck, pigeon and mushrooms.
