Ripeness control to obtain the best balance between intensity and freshness. Grapes harvested by hand for small 40L boxes. Reception in our winery with selection, total stemming and immediate crushing. Fermentation with temperature control at around 16ºC, using very gentle crushing and pressing processes under an inert atmosphere. Aging in small stainless steel vats ('unoaked') to preserve the primary aromas and highlight the varietal character of this white wine.

Tasting Notes:
White wine of pale yellow colour with greenish hints. Due to the nature of the grape variety, this wine has markedly citrus aromas, with a mineral touch and tropical nuances. In the mouth it has a very present acidity and freshness, in a dry and tense register, with volume and persistence, with a long and vibrant finish.
Store and Serve Advices:
Serve at 10/12ºC.
Food Pairing:
Excellent as an aperitif or starter, it also goes well with fish or seafood dishes from Mediterranean cuisine, spicy dishes from oriental cuisine or sushi.
