After a careful and meticulous harvest of the best bunches, the grapes were sent to a refrigerated container, where they spent 12 hours at 6ºC. The following day, they were transported to the winery in a refrigerated environment, where they were completely destemmed and crushed at the entrance to the fermentation tank. Fermentation took place in large tanks, with an optimal contact surface ratio and at a controlled temperature of 24ºC, with total fermentation for 20 days. After alcoholic and malolactic fermentation, two thirds were aged in stainless steel on fine lees and one third in new French oak barrels for one year. After bottling, it was aged for nine months in bottles until being released onto the market.

Tasting Notes:
Deep, deep ruby color. Pure and effusive aromatic profile, revealing the grape variety. Concentrated, rustic and balsamic, with bergamot and cassis at the forefront, well-integrated wood, and light nuances of Indian ink. The palate reveals power, freshness and concentration. Silky, almost velvety tannins, giving great depth to the palate. A unique wine that will live for many good years.
Store and Serve Advices:
Serve at a temperature between 14ºC and 16ºC.

meat dishes, whether roasted, stewed or stewed, with more or less complex seasonings, and will always be a good option for traditional delicacies involving smoked charcuterie. Finally, the combination with convent sweets will be happy and surprising.
