Product details

Winemaking:
Trincadeira, from the youngest vineyard, was subjected to the most recent and common techniques: after harvest, the grapes were de-stemmed and crushed, followed by fermentation in stainless steel vats at a controlled temperature of 26-28ºC. Extraction was smooth, with light pumping over. After fermentation, the wine was kept in stainless steel. The grapes from old vines were treated in the light of the oldest knowledge, as Talha Wine: after de-stemming the bunches, the grapes fermented in untreated clay jars, by the action of native yeasts and without temperature control. In a long and calm fermentation, the wine and the masses were separated in December, after three months of skin contact.

Service Temperature 16ºC-18ºC.

Food Pairing:
A wine of contemplation, it can, above all, be drunk in good company and paired with a cured sheep's cheese, like Nisa's, broken into small pieces in the Amareleja style. It goes well with stewed meats, including game. Given our origins, it pairs harmoniously with grilled black pork with crumbs, and is also a great partner for cheeses and sausages.
