The grapes are destemmed, followed by pre-fermentation maceration in a marble press for 48 hours. Fermentation takes place in a wine press and stainless steel vats with temperature control. After malolactic fermentation, the wine aged for 12 months in 1⁰ and 2⁰ year old French oak barrels. After bottling, it rested in the bottle for 36 months in our cellar. To preserve all its qualities, this wine has not been stabilised and can naturally create a deposit.

Tasting Notes:
Clear, purple-coloured wine. Blueberry and sour cherry aromas, with mineral and graphite notes. Fresh, intense and spicy with an elegant and persistent finish, revealing the potential for ageing.
Store and Serve Advices:
Consume up to 20 to 30 years if kept in a cool, dark place with the bottle lying flat. It should be served at a temperature of 16ºC. Decanting is recommended.
Food Pairing:
Pairs with red meats, game, intense cheeses and sausages.
