Grapes harvested by hand followed by pressing of whole bunches. Static decanting for 24 hours at a controlled temperature. This is followed by alcoholic fermentation and ageing in stainless steel and French oak barrels for 24 months.

The wine is yellow in colour and the nose has notes of mineral character and phosphorus head. Ageing for 24 months in stainless steel and French oak barrels helped develop complexity and structure along with a tense, deep mouthfeel.
Store and Serve Advices:
Should be served at 11ºC.
Food Pairing:
Good with grilled fishes, robust salads and white meat courses.

The wines from our rarity zone are stored and air-conditioned in the most correct way so that the wine ages correctly in the bottle, but over time, the wine evolves and changes its characteristics.
We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
