Manual harvesting. Selection of the best grapes over several weeks depending on their state of maturation. Total stalking, crushing and pressing. Winemaking in an open spout. Fermentation in stainless steel tanks at controlled temperature. Interruption of fermentation by adding wine alcohol at 96º. Addition of wine alcohol carried out after 6 - 7 days of fermentation in order to maintain the desired amount of sugars. Vinification carried out using traditional methods. Aging using the traditional Canteiro system, in French and American oak casks of different capacities. Batch formation, clarification, filtration and bottling.

Tasting Notes:
A wine with an amber colour and greenish notes that denote age/evolution. With a complex nose reminiscent of dried vegetables (like hay), dried green fig, crystallized citrus and notes of cedar. Concentrated wine, with balanced sweetness and high acidity. With a long, salty finish that makes you salivate.
Store and Serve Advices:
As an aperitif, serve at a temperature of 10ºC; as a dessert wine, serve at 14ºC.
Food Pairing:
It is excellent as a digestive and goes well with desserts and cheeses.
