The whole bunches are trodden by foot in a calcatórium (granite basin) for 3 hours, followed by pressing in a vertical press. The must flows by gravity into cement vats in an underground cellar with optimum natural temperature and humidity conditions. Spontaneous fermentation takes place without temperature control. Aged for 1 year in cement vats.
