After manual harvesting of the pre-selected plots, during which the grapes were carefully chosen, they were cooled to 5ºC, followed by destemming and skin maceration for a few hours at low temperature. After a soft pressing, followed by a long maceration at 6ºC, for 8 days, with the lees and then static decantation. The alcoholic fermentation started, with controlled temperature, in stainless steel vats, passing the must in the middle of the alcoholic fermentation to 500lts French oak barrels, where it remained for a year with the fine lees. Aging for 12 months in 2 new 500lt French oak barrels.

Tasting Notes:
Bright citrus colour. Intense and very elegant aroma, with predominance of various citrus notes, such as lime and grapefruit. In the mouth it is complex, deep and structured, with a lively but very well integrated acidity, which gives it great freshness and persistence. In the long aftertaste, the minerality persists, some notes of dried fruits and a slight smoke. a wine with great aging potential.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serve at a temperature of 10°C to 12ºC.
Food Pairing:
Fish in the oven, grilled and roasted white meats, game dishes and light cheeses.
