Winemaking:
After de-stemming and crushing, the masses are sent to a pneumatic press where the must is separated from the skins, then subjected to static decantation at low temperature for 48 hours for clarification, fermented in stainless steel vats at controlled temperature, aged about 12 months in French oak barrels, partly new and partly used.

Volume, freshness and minerality, together with an enormous gastronomic vocation, are attributes of the Encruzado variety, enhanced by the complexity resulting from an aging period of about 12 months in French oak barrels.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature of 10/12°C.

Oven-roasted fish, roasted goat, soft cheeses.
