The grapes come from a century-old vineyard at Quinta do Caêdo. The harvest is carried out by hand, with the grapes being selected both in the vineyard and on the sorting table at the entrance to the winery. After destemming and gentle crushing, the grapes are transferred to stainless steel vats, where alcoholic fermentation takes place. A long, gentle maceration takes place at a controlled temperature, with the aim of extracting the compounds that express the terroir of that vineyard. The wine is aged in new 1,200-litre French oak barrels for a period of around 30 months. During this period, it undergoes numerous tastings and analyses to monitor its development. To preserve the highest quality, it undergoes only light filtration prior to bottling.

Tasting Notes:
A ruby colour of medium intensity, with an extremely complex bouquet featuring floral notes of rockrose and heather, vibrant red fruits, spicy hints of pepper and cloves, a slight minerality and very well-integrated oak. On the palate, it has good body, firm tannins and vibrant acidity, with floral and red fruit notes, and a finish of extraordinary elegance and longevity.
Store and Serve Advices:
Store the bottle horizontally. Ready to drink now, but with excellent potential for further development in the bottle. The optimal drinking window varies depending on the wine. Ideally, from 3–4 years after the vintage date (as stated on the label). Decanting is recommended 2 hours before serving to allow the wine to breathe. Wines aged 5+ years should be decanted after keeping the bottle upright for 24 hours to allow sediment to settle. Recommended temperature: 16°C to 18°C. Consume within 24 hours of opening.

The wines from our rarity zone are stored and air-conditioned in the most correct way so that the wine ages correctly in the bottle, but over time, the wine evolves and changes its characteristics.
We recommend that you carefully remove the cork and let the wine air for some time in order to release its natural aromas. Avoid decanting as it can be a very aggressive operation for old wines.
